Ingredients:
1/2 cup (1 stick) Challenge Butter
1 cup all-purpose flour
2 cups granulated sugar, divided
1 tablespoon baking powder
1/8 teaspoon salt
1 cup milk
4 cups fresh peach slices
1 tablespoon fresh lemon juice
Ground cinnamon (optional)
Ice cream or whipped cream, for serving (optional)
Preparation:
Step 1: Preheat Oven and Melt Butter
Preheat your oven to 375°F (190°C).
Place the stick of butter in a 13×9 inch baking dish and melt it in the oven as it preheats.
Step 2: Prepare the Batter
In a bowl, combine the all-purpose flour, 1 cup of granulated sugar, baking powder, and salt.
Stir in the milk just until the dry ingredients are moistened.
Step 3: Prepare the Peaches
In a separate bowl, mix the fresh peach slices with the remaining 1 cup of granulated sugar and lemon juice.
Step 4: Assemble the Cobbler
Remove the baking dish with the melted butter from the oven.
Pour the batter evenly over the butter in the baking dish, but do not stir.
Spoon the peach mixture over the batter. Again, do not stir.
Step 5: Bake the Cobbler
Sprinkle the top of the cobbler with ground cinnamon if desired.
Bake for 40 to 45 minutes or until golden brown and bubbly.
Step 6: Serve
Let the cobbler cool slightly before serving.
Serve warm with a scoop of ice cream or whipped cream if desired.
