1 lb. ground chicken
1 medium zucchini, coarsely chopped
Kernels from 1 ear of fresh corn, husks and silk removed
1 medium red bell pepper, finely diced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
4 whole grain buns
Lettuce, tomato slices, and your choice of condiments, for serving
Directions:
Mix the Burger Patty Ingredients: In a large bowl, combine ground chicken, zucchini, corn kernels, red bell pepper, salt, and pepper. Mix until just combined—be careful not to overmix to keep the patties tender.
Form the Patties: Divide the mixture into 4 equal parts. Shape each into a patty about 1/2 inch thick.
Cook the Burgers: Heat olive oil in a large skillet over medium heat. Place the patties in the skillet and cook for 5-7 minutes on each side, or until fully cooked through and golden brown on the outside.
Assemble the Burgers: Serve the chicken burgers on whole grain buns, topped with lettuce, tomato slices, and your favorite condiments.
