Lamb Chops over Lobster Mash with Asparagus

•Ingredients:

For the Lamb Chops:

8 lamb chops
2 tbsp olive oil
2 cloves garlic, minced
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
Salt and pepper to taste
For the Lobster Mash:

2 large potatoes, peeled and cubed
1/2 cup butter
1/2 cup heavy cream
1 cup cooked lobster meat, chopped
Salt and pepper to taste
For the Asparagus:

1 bunch asparagus, trimmed
1 tbsp olive oil
Salt and pepper to taste
Lemon wedges for serving

•Instructions:

For the Lamb Chops:

Rub lamb chops with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
Heat a skillet over medium-high heat. Sear lamb chops for 3-4 minutes per side for medium-rare, adjusting time for preferred doneness. Set aside to rest.
For the Lobster Mash:

Boil cubed potatoes in salted water until tender, about 15 minutes.
Drain and mash potatoes with butter and heavy cream until smooth.
Fold in the chopped lobster meat and season with salt and pepper.
For the Asparagus:

Toss asparagus with olive oil, salt, and pepper.
Roast in a 400°F (200°C) oven for 10-12 minutes until tender.
