INGREDIENTS:
2 catfish fillets (about 1 lb/450g total)
1/2 lb (225g) large shrimp, peeled and deveined
2 tbsp olive oil
2 tbsp Cajun seasoning
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
4 tbsp butter, melted
1 tbsp lemon juice
1 tbsp fresh parsley, chopped
Lemon wedges (for serving)
INSTRUCTIONS:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Pat catfish fillets and shrimp dry with paper towels. Brush them with olive oil.
In a small bowl, mix Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper. Rub this mixture all over the catfish and shrimp.
Place the seasoned catfish and shrimp on the prepared baking sheet. Bake for 15-20 minutes, or until the fish flakes easily with a fork and shrimp are cooked through.
While the fish and shrimp are baking, combine melted butter with lemon juice and fresh parsley.
Drizzle the zesty lemon butter over the baked catfish and shrimp.
Serve hot with lemon wedges on the side.
