•INGRÉDIENTS:
2 cups all-purpose flour
1/4 cup granulated sugar
1/4 cup brown sugar, packed
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
6 tablespoons cold unsalted butter, cut into small cubes
1/2 cup pumpkin puree
1/3 cup heavy cream (plus more for brushing)
1 large egg
1 teaspoon vanilla extract
For the Glaze:
1 cup powdered sugar
1-2 tablespoons milk
1/2 teaspoon vanilla extract
Optional: A pinch of cinnamon for extra flavor
•INSTRUCTIONS:
1️⃣ Prepare the Dough:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
In a separate bowl, whisk together the pumpkin puree, heavy cream, egg, and vanilla extract until well combined.
2️⃣ Combine the Ingredients:
Pour the wet ingredients into the flour mixture. Gently fold the ingredients together with a spatula or wooden spoon until just combined. Be careful not to over-mix; the dough should be slightly crumbly but hold together when pressed.
3️⃣ Shape and Bake the Scones:
Turn the dough out onto a lightly floured surface and shape it into a disk about 1-inch thick and 7-8 inches in diameter.
Using a sharp knife or a bench scraper, cut the disk into 8 wedges (like slicing a pizza).
Place the wedges onto the prepared baking sheet, spacing them slightly apart. Brush the tops with a little heavy cream to help them brown.
Bake in the preheated oven for 18-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
4️⃣ Glaze the Scones:
While the scones are baking, prepare the glaze by mixing the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Add a pinch of cinnamon for extra flavor if desired.
Once the scones have cooled slightly, drizzle the glaze over the top of each scone.
