Bourbon Chicken with Broccoli

•INGREDIENTS:
1 lb chicken breast, diced
2 cups broccoli florets
2 tbsp olive oil
1/4 cup soy sauce
1/4 cup apple juice (bourbon substitute)
1/4 cup brown sugar
2 tbsp ketchup
1 tbsp apple cider vinegar
2 cloves garlic, minced
1 tsp ground ginger
1 tbsp cornstarch (optional, for thickening)
Green onions for garnish

•INSTRUCTIONS:
Heat 1 tbsp olive oil in a pan over medium heat and cook broccoli until tender, then set aside.
In the same pan, add remaining olive oil and cook chicken until browned and cooked through.
In a bowl, mix soy sauce, apple juice, brown sugar, ketchup, vinegar, garlic, and ginger.
Pour the sauce into the pan with the chicken and cook until it thickens (use cornstarch if needed).
Add the broccoli back to the pan and toss to coat.
Garnish with green onions and serve.
