Creamy Parmesan Italian Sausage Soup

 

Ingredients:

1 lb Italian sausage (mild or spicy)
1 tablespoon olive oil
1 medium onion, diced
3 garlic cloves, minced
4 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
3 cups fresh spinach
2 large russet potatoes, diced
1 teaspoon dried oregano
1 teaspoon red pepper flakes (optional)
Salt and pepper to taste

Directions:

In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
Remove the sausage from the pot and set it aside. Add onions and garlic to the pot, sautéing until the onions are translucent.
Pour in the chicken broth and add diced potatoes. Simmer for 15-20 minutes until potatoes are soft.
Stir in the heavy cream and Parmesan cheese, allowing the cheese to melt into the broth.
Return the cooked sausage to the pot and add spinach. Simmer for 2-3 minutes, just until the spinach wilts.
Season with oregano, red pepper flakes, salt, and pepper to taste.
Serve hot with crusty bread on the sides
