Ingredients:
For the Seafood:
1 lobster tail, cooked and chopped
½ lb crab meat, picked over for shells
2 salmon fillets (about 8 oz total), skin removed and cut into bite-sized pieces
2 tablespoons Cajun seasoning
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
½ teaspoon black pepper
½ teaspoon salt
For the Alfredo Sauce:
1 ½ cups heavy cream
1 cup Parmesan cheese, freshly grated
3 tablespoons butter
2 cloves garlic, minced
½ teaspoon Cajun seasoning (adjust to taste)
½ teaspoon salt (plus more to taste)
¼ teaspoon black pepper
¼ teaspoon cayenne pepper (optional, for extra heat)
For the Pasta:
12 oz fettuccine or your favorite pasta
1 tablespoon salt (for pasta water)
Instructions:
Cook the Pasta:
• Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside.
Season and Sear the Seafood:
• In a large bowl, toss the salmon pieces, lobster, and crab meat with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper.
• Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the salmon pieces and cook for 2-3 minutes on each side until golden and just cooked through. Remove and set aside.
• Add the lobster and crab meat to the same skillet, sautéing gently for 1-2 minutes. • Remove and set aside with the salmon.
Make the Cajun Alfredo Sauce:
• In the same skillet, melt 3 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
• Stir in the heavy cream, Cajun seasoning, salt, and black pepper. Bring to a gentle simmer, then gradually stir in the grated Parmesan cheese.
• Continue cooking the sauce, stirring occasionally, until it thickens (about 4-5 minutes). Adjust seasoning to taste, adding cayenne pepper for extra heat if desired.
Combine and Serve:
• Add the cooked pasta to the Alfredo sauce and toss to coat evenly.
• Gently fold in the lobster, crab, and salmon, being careful not to break the delicate seafood.
• Let everything heat through for 1-2 minutes on low heat, then remove from the stove.
Garnish and Serve:
• Serve the Cajun lobster, crab, and salmon Alfredo in bowls, garnished with extra Parmesan cheese and fresh parsley if desired.
