Red Snapper, Shrimp & Grits with a Cajun Cream Sauce 

 

Ingredients:
4 red snapper fillets
1 lb shrimp, peeled and deveined
1 cup grits
2 cups water
1 cup heavy cream
1/2 cup shredded cheddar cheese
2 tbsp Cajun seasoning
4 tbsp butter
1 tbsp olive oil
2 cloves garlic, minced
1/2 cup chicken broth
Salt and pepper to taste

Instructions:
1: Cook grits in water and 1/2 cup cream until thick, then stir in cheese and season with salt and pepper.
2: Season snapper with Cajun seasoning. Sear in a hot pan with olive oil until cooked through.
3: Cook shrimp in butter until pink, then remove from pan.
4: In the same pan, add garlic, remaining cream, and chicken broth. Cook until sauce thickens.
5: Serve snapper and shrimp over grits, topped with the Cajun cream sauce.

Notes:
For a spicier dish, increase the amount of Cajun seasoning in the sauce.
