2 ribeye steaks (about 1 inch thick)
2 tablespoons olive oil

4 large potatoes, peeled and thinly sliced
2 tablespoons unsalted butter
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup milk
1 cup heavy cream
1 ½ cups shredded sharp cheddar cheese
½ cup grated Parmesan cheese

Instructions:
Prepare the Cheesy Scalloped Potatoes:
Preheat the Oven:
Set your oven to 375°F (190°C) and lightly grease a baking dish.
Make the Cheese Sauce:
In a saucepan, melt the butter over medium heat. Add the chopped onion and sauté until soft, about 3-4 minutes.
Stir in the minced garlic and cook for another minute.
Thicken the Sauce:
Add the flour and cook for 1-2 minutes, stirring continuously. Gradually whisk in the milk and heavy cream. Let it simmer until the sauce thickens, about 5 minutes.
Add the Cheese:
Remove the sauce from the heat, then stir in the cheddar and Parmesan until melted and smooth. Season with salt, pepper, and paprika if desired.
Layer and Bake:
Arrange half of the sliced potatoes in the greased baking dish. Pour half of the cheese sauce over the potatoes. Repeat with the remaining potatoes and sauce.
Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly. Let it cool slightly before serving.
Serve:
Plate the ribeye steaks alongside a generous portion of cheesy scalloped potatoes. Garnish with fresh herbs if desired.

While the potatoes are baking, season the ribeye steaks with salt and black pepper.
