Ingredients:
2 cups tvorog (or ricotta cheese if unavailable)
1/2 cup semolina flour
1/4 cup granulated sugar
2 large eggs
1/4 cup sour cream
1 tsp vanilla extract
1/2 cup raisins (optional)
1/4 tsp salt
Powdered sugar (for dusting)
Butter (for greasing the baking dish)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9-inch round or square baking dish with butter.
Prepare the Batter:
In a large mixing bowl, combine the tvorog (or ricotta), semolina flour, sugar, eggs, sour cream, vanilla extract, and salt. Mix until the batter is smooth and well-combined. If using raisins, fold them into the mixture.
Bake the Zapekanka:
Pour the batter into the prepared baking dish and smooth the top with a spatula. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve:
Allow the zapekanka to cool slightly before cutting it into squares or slices. Dust with powdered sugar before serving.
Serve:
Zapekanka can be enjoyed warm or cold, making it a versatile dish for breakfast, dessert, or a sweet afternoon treat. Serve with a dollop of sour cream or a drizzle of honey for added richness!Prep Time: 10 minutes | Bake Time: 40 minutes | Total Time: 50 minutes
