Curry Coconut Chicken Salad 

 

Ingredients:

2 cups cooked chicken, shredded

1/2 cup Greek yogurt

1/4 cup mayonnaise

1/4 cup grated coconut (sweetened or unsweetened)

1 tbsp curry powder

1/2 cup celery, diced

1/4 cup red onion, finely chopped

1/4 cup raisins or dried cranberries

1 tbsp lime juice

Salt and pepper, to taste

Fresh cilantro, for garnish

Mixed greens or lettuce, for serving

Directions:

1. Make the Dressing: In a large bowl, whisk together Greek yogurt, mayonnaise, curry powder, lime juice, salt, and pepper until smooth.

2. Mix the Salad: Add shredded chicken, grated coconut, celery, red onion, and raisins or cranberries to the dressing. Stir until everything is coated.

3. Chill: Cover and refrigerate for at least 30 minutes to let the flavors blend.

4. Serve: Enjoy on a bed of mixed greens or lettuce, garnished with fresh cilantro.
