Cake Ingredients:
– 3 eggs
– 135g neutral oil
– 1 1/3 cups room temperature milk
– 3 tsp vanilla essence
– 1 1/2 cups sugar
– 3 cups all-purpose flour
– 3/4 cup unsweetened cocoa powder
– 3 tsp baking powder
– 2 tsp baking soda
– 1 tsp salt
– 1 1/4 cups boiling water
– 1 1/2 tsp instant coffee
Ganache Ingredients:
– 15 oz semi-sweet chocolate
– 1 cup (2 sticks) butter
– 1 cup heavy cream
Instructions:
1. Preheat oven to 325°F (170/180°C).
2. In a large bowl, whisk eggs, then add neutral oil, milk, vanilla essence, and sugar. Mix well.
3. In another bowl, sift flour, cocoa powder, baking powder, baking soda, and salt together.
4. Gradually add dry mixture to wet ingredients, mixing continuously.
5. Dissolve instant coffee in boiling water, then add to batter. Mix until smooth.
6. Pour batter into cake pans and bake for 15 minutes for individual discs or 35-40 minutes for a larger pan (9-10 inches), until a toothpick comes out clean.
7. For ganache, melt chocolate, butter, and heavy cream until smooth. Let cool to room temperature for easy spreading.
8. Once cakes are cooled, fill and decorate with ganache.
