Ingredients:
– 2 cups (250g) strong white bread flour, plus extra for kneading
– 1 teaspoon salt
– 1 teaspoon fast-acting instant yeast
– 1 tablespoon softened butter
– 2 tablespoons Greek yogurt
– 150 ml cool water
– 2 tablespoons melted butter
– 2 teaspoons garlic puree
– 2-3 teaspoons chopped coriander (cilantro)
– Olive oil for frying
Instructions:
1. In a large bowl, combine flour, salt, and yeast. Add softened butter, Greek yogurt, and most of the water. Adjust water as needed for a soft, slightly sticky dough.
2. Using a wooden spoon, stir until a dough forms. Transfer to a floured surface and knead for 5-10 minutes until smooth.
3. Lightly oil a large bowl, place the dough inside, cover, and let it rise until doubled in size (typically a couple of hours).
4. Tip the dough onto a floured surface, fold it inwards to release air, then divide into six equal pieces.
5. Roll each piece into a 4.5-5 inch diameter circle. Place on a lined baking tray to relax for 30-45 minutes.
6. Mix melted butter, garlic puree, and chopped coriander in a bowl. Set aside.
7. Heat olive oil in a pan over medium-high heat. Fry each flatbread for 3-4 minutes on each side until golden and puffed
8. Remove from heat and brush with the garlic and coriander butter before serving. Enjoy these amazing garlic flatbreads in just 10 minutes!
