Ingredients:
4 lamb chops
Salt and pepper to taste
2 tablespoons olive oil
1 cup fresh pineapple, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeno, finely chopped
1 lime, juiced
1 tablespoon honey
1/2 teaspoon chili flakes
Directions:
Season the lamb chops with salt and pepper on both sides.
Heat olive oil in a grill pan over medium-high heat.
Grill the lamb chops for 3-4 minutes on each side or until they reach the desired level of doneness. Remove from heat and let rest.
In a medium bowl, combine the diced pineapple, red onion, cilantro, jalapeno, lime juice, honey, and chili flakes.
Mix well to combine all the ingredients.
Spoon the pineapple salsa over the grilled lamb chops.
Serve immediately.
