Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

¾ cup whole milk

1 ½ cups fresh or frozen blueberries (lightly coated in flour to prevent sinking)

For the Frosting:

1 ½ cups heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

For Garnish:

Fresh blueberries

Lemon zest (optional)

Instructions

1. Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch cake pans or line them with parchment paper.

2. Prepare the Cake Batter
In a medium bowl, whisk together flour, baking powder, and salt.

In a separate large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

Gradually add the dry ingredients into the wet ingredients, alternating with milk, mixing until just combined. Gently fold in blueberries coated in flour.

3. Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

4. Prepare the Frosting
In a chilled mixing bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

5. Assemble the Cake
Place one cake layer on a serving plate. Spread a generous amount of whipped cream frosting on top. Place the second cake layer over it and frost the entire cake.

6. Garnish and Serve
Decorate with fresh blueberries and lemon zest if desired. Serve chilled for the best texture.

Tips for the Best Blueberry Cake

Coat blueberries in flour to prevent them from sinking in the batter.

Use fresh or frozen blueberries, but if using frozen, do not thaw before adding them to the batter.

Let the cake cool completely before frosting to avoid melting.

Chill the frosting bowl and beaters before whipping for a fluffier texture.

Variations to Try

Lemon Blueberry Cake – Add 2 teaspoons lemon zest to the batter for extra citrus flavor.

Cream Cheese Frosting – Swap the whipped cream for cream cheese frosting for a richer taste.

Almond Blueberry Cake – Add ½ teaspoon almond extract for a nutty twist.
