Ingredients:
1+1/2 cups sugar
1/3 cup cold water
2 egg whites
A pinch of salt
1 teaspoon vanilla extract
1/2 teaspoon cream of tartar
Directions:
– In a medium glass bowl, mix sugar, cold water, cream of tartar, egg whites, and salt.
– Place a puddle of water to simmer on the burner. Beat the egg mixture at low speed for 30 seconds using an electric mixer.
– Place the bowl on the saucepan of a double boiler, bathed high until rigid and light for up to seven minutes.
– Remove from heat, add vanilla extract, and mix for an additional 2 minutes until well integrated.
– The frosting sets rapidly, so use it immediately.
Note: To frost a layer cake, double the recipe. No need to make two batches; just double and make it all at once.
