CARROT CAKE RECIPE 

INGREDIENTS

 

◾️2 cups All Purpose Flour

◾️1 cup white sugar

◾️½ cup brown sugar

◾️¾ cup vegetable oil

◾️2 cups finely grated carrots

◾️2 large eggs

◾️½ cup buttermilk

◾️2 tsp baking powder

◾️½ tsp bicarbonate of soda

◾️2 tsp vanilla

◾️1 tsp ginger powder

◾️2 tsp cinnamon

◾️½ tsp nutmeg

◾️½ tsp salt

◾️½ cup raisins (optional)

◾️¾ cup chopped walnuts

 

INSTRUCTIONS

 

◾️Preheat the oven to 170°c.

 

◾️In a large bowl add oil, white and brown sugar.

 

◾️Beat until light .

 

◾️Mix in the eggs one at a time.

 

◾️Add buttermilk and vanilla then mix well.

 

◾️Sift in flour, baking powder, bicarbonate of soda, salt, cinnamon, nutmeg and ginger.

 

◾️Then gently mix.

 

◾️Add the grated carrots, walnuts with raisins, and gently mix.

 

◾️Line 2 baking pans with parchment paper.

 

◾️Divide the batter (mixture) equally in 2 baking pans.

 

◾️Bake in a preheated oven for 30-35 minutes minutes or until well baked.

 

(Note that baking time depends on your oven.)

 

◾️Let the cakes cool off completely before taking them out of the baking pan.
